The 2021 Specialty Coffee Holiday Season is Heating Up!

Starbucks is officially kicking off the holiday season with its new holiday lineup, including a brand new sugar cookie latte! For the first-time ever, the company will debut a non-dairy beverage in its holiday lineup, the Iced Sugar Cookie Almond Milk Latte, which can be either cold or hot. Starbucks is also bringing back its well-known favorites like Peppermint Mocha, Caramel Brulee, Chestnut Praline, Toasted White Chocolate Mocha and the Irish Cream Cold Brew. Dunkin’s new drinks include a Toasted White Chocolate Signature Latte and a new White Mocha Hot Chocolate! The Dunkin Peppermint Mocha is also back on the menu this year. Caribou Coffee has three new holiday additions, the Ho Ho Mint Mocha, the Spicy Mocha and for egg nog lovers the Fa La Latte! Dutch Brothers also has three new Holiday additions, the Peppermint Bliss Cold Brew, Hazelnut Truffle Mocha and Glacier Peak Rebel! People don’t want to miss out on limited time seasonal offers and they all have one major ingredient in common, water! Espresso is 85-96% water and that water is extremely important to delivering not only a great shot of espresso but not damaging a very expensive espresso machine. Chlorine can alter the aroma and increases acidity. It also bonds with organics creating an earthy or moldy overtone to the flavor. TDS, (total dissolved solids), can cause poor extraction of the grounds, under extraction leads to weak and sour drinks and over extraction leads to bitterness so taking care to treat coffee and espresso beverage water is extremely important. Regardless of which one is your favorite, operators know and work diligently to make sure that all of these beverages begin with a great shot of espresso. Pentair continues to lead the Industry in taking care of coffee and espresso water quality by working directly with Specialty Coffee Operators and Espresso Equipment Manufactures. Both the Everpure and Optipure product lines deliver proven solutions to help  Operators engineer the water they need to deliver the espresso beverage that meets their specifications. For espresso, that means a softer water that also protects the equipment from both hard water scale and corrosion from chloride. For a superior quality extraction of coffee solids the Statistics & Standards Committee of the Specialty Coffee Association of America has determined the following standards for the water used to brew specialty coffee.

Characteristic Target Acceptable Range
Odor 1 Clean / Fresh, Odor free
Color 2 Clear color
Total Chlorine O mg/L
TDS 3 150 mg/L 75 – 250 mg/L
Calcium Hardness 4 grains or 68 mg/L 1 – 5 grains or 17 mg/L – 85 mg/L
Total Alkalinity 40 mg/L At or near 40 mg/L
pH 7.0 6.5 to 7.5
Sodium 10 mg/L At or near 10 mg/L
1 Odor is based on sensory olfactory determination
2 Color is based on sensory visual determination
3 TDS measured based on a 4-4-2 conversion

The Target is the most desirable point in the Acceptable Range, although falling within the range is considered meeting the standard. These variances are in place to take into consideration real world circumstances, and the target gives the optimum measurement of each characteristic to strive for. For an operator then, the place to begin is with a POE, point of entry standard Everpure water test, DEV7013-73. This test includes the water bottle and lab analysis of 30 contaminants and characteristics. The test usually takes from 7 to 10 days to analyze at the laboratory located in Chicago and the following is a sample of the delivered analysis;

In order to provide both a superior quality shot of espresso and protect the equipment from scaling and/or corrosion this water would be way out of specification. La Marzocco publishes the following water quality specification for the warranty of there espresso machines;

This water has hardness of 257 ppm and chlorides of over 308.8 ppm   so the recommendation would be an Optipure BWS reverse osmosis system to actually take the mineral and chloride out of the water and deliver water with the correct specification of both TDS, total disolved solids between 90ppm and 150ppm and chlorides of less than 3o ppm in order to protect the machine from corrosion.  The size of the unit is determined according to the amount of beverage water that will be needed at peak operating time within the facility.

Optipure BWS Systems include;

These systems can be sized to fit one piece of equipment or all of the coffee, espresso, beverage, etc..equipment that you are using to insure that the water you are using will protect your equipment from whatever changes occur within your water supply and provide the perfect water and ice for your beverages. Worried about elevated levels of Arsenic in your Drinking Water?

According to a recent USGS study, an estimated 4.1 million people in the lower 48 states are potentially exposed to arsenic levels that exceed EPA’s drinking water standards. U.S. Geological Survey (USGS) study showed that drought may lead to elevated levels of naturally occurring arsenic and that the longer a drought lasts the higher the probability of arsenic concentrations exceeding U.S. EPA drinking water standards.  According to researcher estimates, during drought conditions, 4.1 million people in the lower 48 states who use private domestic wells are likely exposed to unsafe levels of arsenic, reported the study. This is an increase of 54% from an estimated 2.7 million people exposed to unhealthy arsenic levels in private wells during non-drought conditions.  “The population potentially exposed to arsenic levels exceeding the EPA standard during simulated drought conditions amounts to roughly one-tenth of the estimated 37.2 to 43.2 million people in the conterminous U.S. who use domestic wells for household water supply,” said Melissa Lombard, a USGS hydrologist and lead author of this study, reported USGS. Regardless of whether you have your own well and could face the exposure to Arsenic that this USGS study is anticipating or if your goal really is just to avoid everything bad in your water coming from your tap, you may want to consider a very affordable reverse osmosis system to put under your sink to take everything out of the water. Reverse osmosis drinking water systems are the number one recommendation for removing a wide variety of these contaminants including arsenic, atrazine, chloroform, Lead, Fluoride and other industrial chemicals. The Pentair Everpure ROM IV (EV929650) system is an NSF/ANSI Standard 58 system rated to reduce contaminants including, Arsenic V, Barium, Cadmium, Chromium III, Chromium VI, Copper, Cysts, (Cryptosporidium and Giardia), Fluoride, Lead, Radium 226/228, Selenium, TDS, ( Total Dissolved Solids), Turbidity, Chorine tastes and odors plus carcinogen byproducts and dissolved minerals and salts. Since 1933, Pentair Everpure has been one of the most trusted global brands in the foodservice industry and those who serve it. Their proven solutions help to protect water at your home and where you work. From premium quality ingredient water for foodservice; fresh, clean, drinking water at home or away; or treated water for the whole home, Pentair Everpure delivers peace of mind and water you can trust.

Florida Gov. Ron DeSantis announces Phase 2 reopening of bars, movie theaters and bowling alleys to start Friday!

Bars and pubs will now be able to operate at 50 percent capacity indoors and at full capacity outdoors, and entertainment businesses such as movie theaters and bowling alleys can open at 50 percent capacity beginning on Friday as well. Personal service businesses such as tattoo parlors may reopen as well, and people can begin gathering in groups of 50 or less, starting Friday.

Re-opening your Restaurant or Food Service Facility? If you are an owner operator and have been shut down for an extended period of time, Pentair Everpure has the following guidance for your water treatment system;

Filtration systems are designed to be operated on a continuous basis with only relatively short periods of down time (overnight and holidays). When a system is shut down for an extended period of time, there is a potential for microbiologic growth. To address concerns with system operation after the shutdown, please follow the below instructions. This is applicable to all Pentair filtration systems (i.e., pre-filters, carbon-based cartridges and Reverse Osmosis (RO) systems).

Periodic Flushing In cases where the customer knows that the system will be down for an extended time and is able to get to the system on a periodic basis, follow the below flushing procedure every 3-4 days:

Filtration Systems
Flush the system for a minimum of 5 minutes by letting the outlet water run to the drain. For systems with multiple outlet ports, flush for a minimum of 5 minutes through all ports.
RO Systems
Empty the tank through the outlet port until the pump turns on. Once the pump is on, flush the system for 10 minutes by letting the outlet water run to the drain. For systems with multiple outlet ports, flush through all ports.
Shutdown for Less Than or Equal to 7 Days:

Filtration Systems
When you put the system back into operation, flush the system for a minimum of 5 minutes by letting the outlet water run to the drain and then proceed with normal operations. For the systems with multiple outlet ports, flush for a minimum of 5 minutes through all ports.
RO Systems
When you put the system back into operation, empty the tank through the outlet port until the pump turns on. Once the pump is on, flush the system for 10 minutes by letting the outlet water run to the drain and then proceed with normal operations. For the systems with multiple outlet ports, flush for a minimum of 10 minutes through all ports.

Shutdown for Greater Than 7 Days:

All Systems (Filtration and RO)
Remove all existing filtration elements that are present in the system (pre-filters, carbon filters &/or RO cartridges) and dispose. Disinfect the system as instructed in the applicable Installation and Operations Guide for that specific system.
After the disinfection process is complete, replace the filtration elements with all new pre-filters, carbon filters &/or RO cartridges. Flush the system as instructed in the applicable IO Guide to complete the procedure.

Softeners
Initiate a manual regeneration.
Shutdown for Greater Than 30 Days:
Softeners
Disinfect per the Installation and Operation Guide for that specific unit. Generally speaking, it is adding some bleach to the brine tank before initiating a manual regeneration.

Assumptions
Pentair assumes the following in providing this guidance: Incoming water is potable.

There is no boil-water advisory or boil-water order issued by the applicable public health or governmental authority.

System is being maintained within normal operating temperature and other conditions as set forth in the applicable specification sheet.

If you have concerns or cannot confirm these assumptions for the system, follow the instructions above under the section entitled “Shutdown for Greater Than 7 Days”.

Florida is ready for phase 2 !

After an incredibly successful phase 1 opening for Restaurants and Retail throughout Florida starting last Monday. Governor Desantis allowed Hair and Nail Salons to reopen this week and it sounds like he is now ready to move Florida into Phase Two with an announcement later today!

Bars, pubs, and nightclubs that derive more than 50 percent of sales from alcohol will be able to operate at 50 percent of building capacity with an emphasis on diminished standing room capacity and prioritizing outdoor service, according to the governor’s plan. Gyms and fitness centers will be able to operate at 75% capacity. Restaurants will be able to increase occupancy to 75%, if appropriate social distancing and a minimum of 6-feet separates parties. The plan says that in phase two, theme parks could consider reopening with capacity limits, strict social distancing and proper measures to clean and disinfect. Sporting events will be encouraged to limit the occupancy of venues to 50 percent and will have to practice strict social distancing during phase two.
